A.R. Valdespino El Candado Pedro Ximenez Sherry – NV – 9.5 – James Meléndez / James the Wine Guy

This is a great packaging.  There is an actual padlock safeguarding the contents of this wine.  Candado in the Spanish means padlock.  A. R. Valdespino is a heritage sherry producer—spanning back to 1264.  Sherry is so mis-understood and under appreciated.  The Pedro Ximenez is an evocative Sherry– there is no other wine that even approaches the quality and uniqueness of this wine.  This is a dense, dark and viscous wine.

A dazzingly Pedro Ximenez wine with notes of truffle honey, clover, lavendar, dried Turkish fig, dates, pine nuts and vanilla.

Nectar Pedro Ximenez Sherry – 8.4 – James Meléndez / James the Wine Guy

This Pedro Ximenez by Gonzales Byass presents a wine that relatively low in alcohol (15.5%) compared with other Sherries which can rocket up to 17%+.  This wine has a strong influence of raisin and simmered plum but the usual cascades, bursts and continuous flavor tends to waiver and is not the tour de force that is enjoyable.

Lustau Solera Reserve San Emilio Pedro Ximenez – 9.4 – James Meléndez / James the Wine Guy

I adore Pedro Ximenez sherry’s. Sherry’s are the gift that can only come from Espana; a gorgeous digestif. I would not characterize a Pedro Ximenez as an elegant, delicate wine; rather I would call it an honest homage to one of the great wine making traditions on the planet. It is a loving wine; one that imparts not just love but closeness, warmth and certainty. Powerful words? No it is an honest assessment of a wine that should get more accolades. I enjoy this wine with Marcona almonds.

The best way to enjoy a PX is to let the wine remain in your mouth for a while; suspend the enjoyment; enjoy each flavor that cascades one over the next and back again; there is consistency and boldness in this wine. This wine is beautifully viscous; this wine gives essence of chocolate ganache, truffled honey, Adriatic fig, toasted Brazil nut, and passion fruit confit.

Vinicola Hidalgo Pedro Ximenez Viejo – 9.3 James Meléndez / Jaime Patricio Meléndez

I don’t know if I have ever tasted a PX that I didn’t like; I am still up for that challenge.  Vinicola Hidalgo is a wondrous PX.  Super sticky and with a mouth suspension of this Sherry will promise absolute delight.  This PX has an expansive notes of roasted nuts and wood; a hint of leather, and burnt caramel.

Bodegas Dios Baco Pedro Ximenez – 9.6 – James Meléndez / James the Wine Guy

I have gotten in touch with one of my heritages and have fallen head over heals for one of the greatest wines on our planet. Sherry and Champagne are two very difficult wines to make but one I certainly could not live without. Sherry is painstakingly difficult to produce but those hard effort pay off in ways that cannot be described other than ethereal.

The Spanish have the good fortune of producing one of the most amazing and yet under appreciated wines – Vino Jerez / Sherry / Xeres.
PX is my favorite of the Sherries. Upon first experience you might say to yourself– this is it! This is the flavour profile that I have been seeking yet have not found until now. PX have a few commonalities 1) viscous 2) glorious. This PX by Bodegas Dios Baco is rich with harmonious deep roasted notes of chestnuts, almonds and balanced with hazelnut, straw, cedar, vanilla, cacao; each mouth feel is anticipating this amazing wine; each suspension brings a crescendo that never dies. When you take a taste; leave it in your mouth for many seconds for me it is half a minute; each finish will be clean and you will wonder if there is alcohol in this wine.

¡Salud!

NOTE: REAFFIRM RATING IN 2008 TASTING.
