A very crisp, delicate Sauvignon Blanc with the right amount of acid (I am sure you have had a Sauvgnon Blanc where the acids are too intense); this wine has a plentitude of Granny Smith apple, papaya, mineral, and fleshy Comice pear.

Copain L’hiver Mendocino County Syrah the most northern reaches for a California Syrah. This Syrah has the qualities of it’s cool evening and warm day climature that is different from it’s brethren south and east of Mendocino County. The flavor signature of this Syrah is quite a bit different here than other Syrahs in Rhone or warmer Napa Valley or Sonoma county.
This wine gives a nice layer of red plum, smoke, Sarawak black pepper, and forest floor.
