I adore Pedro Ximenez sherry’s. Sherry’s are the gift that can only come from Espana; a gorgeous digestif. I would not characterize a Pedro Ximenez as an elegant, delicate wine; rather I would call it an honest homage to one of the great wine making traditions on the planet. It is a loving wine; one that imparts not just love but closeness, warmth and certainty. Powerful words? No it is an honest assessment of a wine that should get more accolades. I enjoy this wine with Marcona almonds.

The best way to enjoy a PX is to let the wine remain in your mouth for a while; suspend the enjoyment; enjoy each flavor that cascades one over the next and back again; there is consistency and boldness in this wine. This wine is beautifully viscous; this wine gives essence of chocolate ganache, truffled honey, Adriatic fig, toasted Brazil nut, and passion fruit confit.
